Key Differences:
Jailbreaking (JB) - A dongle is required, as well as "power-cycling". This is an outdated method. This is for OFW 3.41 only. This method must be used everytime you want to use the advantages of jailbreaking.
Custom Firmware (CFW) - A modified official ps3 firmware. Better than a jailbreaking, as it is a permenant option, you do not require a dongle, and there is no need to power cycle the console. There are several different CFWs, that allow different features.
How To Jailbreak PS3:
Required - PS3 on 3.41. In the XMB, go to Settings, System Settings, and then System Information to find out which firmware you are on.
Required - PS3 Jailbreak or clone, plus required tools.
Required - PL3 or Hermes HEX files.
Step 1.a - For Phat PS3s, you must first turn off the power switch in the back on the console.
Step 1.b - For Slim PS3s, you must remove the power cord from the back of the console.
Step 2 - Insert Jailbreak device into USB port (left or right, try both and see which works for you)
Step 3 - You must hit the Power button, and then proceed to immediately hit the Open button.
Step 4 - On the XMB, you should now see two new folders in the XMB, *Install Package Files and */app_home/PS3_GAME/. If not, repeat the process.
How to Install CFW on PS3 (Method 2):
Required - PS3 on 3.55 firmware of lower. In the XMB, go to Settings, System Settings, and then System Information to find out which firmware you are on.
Required - USB drive, formatted FAT32.
Required - CFW.
Step 1 - Place the CFW into the USB drive, in the following folder: x:/PS3/UPDATE/PS3UPDAT.PUP. Be sure the file is named correctly.
Step 2 - Put the USB drive into the PS3
Step 3 - Start the PS3 in Recovery Mode (hold down power while turning on, and let go after third beep). In the Recovery Menu, select option 6 (System Update) to install.
Step 4 - On the XMB, you should now see two new folders in the XMB, *Install Package Files and */app_home/PS3_GAME/.

The *Install Package Files folder is used to install *.PKG files onto the PS3. These can range from various things, such as emulators, games, backups, updates, and much, much more.
Now, about the */app_home/PS3_GAME/ folder. Once a backup is selected, you are able to select this folder to launch the backup.
